
This afternoon I pulled out a pound of Italian sausage and threw it in the microwave to thaw. An hour went by and I still hadn't figured out what to do with my sausage. After hum-hawing around and finding myself in a desperate situation I decided to make a mock Alfredo lasagna. It turned out pretty good so here's the recipe if anyone cares for pasta.
Sausage Alfredo Lasagna
1 lb. Italian sausage
12-16 oz. pasta (just pick your favorite)
1 small bottle dried tomatoes
8 oz. mozzarella cheese
Alfredo Sauce
2 tbs. butter
2 tbs. flour
2 cups milk
salt
pepper
1/2 cup Parmesan cheese
Directions
Cook Pasta until mostly done. Cook Italian sausage and drain. To make the Alfredo sauce melt the butter in a sauce pan over medium heat. Add 2 tbs. flour and whisk. Then add the 2 cups milk, salt and pepper. Heat until boiling. Let cook while stirring for one minute. Remove from heat and add Parmesan cheese. In 9x12 casserole dish add mixture of sauce, sausage, and pasta. It is optional to add the dried tomatoes. Spread evenly and cover entire top with mozzarella cheese. Cook at 350 degrees for 15 -20 minutes.
